Here you will learn how to make medu vada, sambar and chutney
MEDU VADA RECIPE
INGREDIENTS
- Split black gram – 2 cups
- Flattened rice powder – 1/2 cup
- Green chili and Ginger – 2 tablespoon paste
- Salt – 1 tablespoon
- Fresh water – 1/2 cup (more or less as per requirement)
- refined oil – 3 to 4 cups for deep frying
TOTAL RECIPE TIME: 5 HOURS
SPLIT BLACK GRAM (URAD DAL) IN WATER - 4 HOURS
PREPARATION OF MEDU VADA : 1 HOUR
QUANTITY - 8 PLATES
PROCEDURE
First of all take a bowl and put split gram in it.
Wash it in water for 3 to 4 times. Again add fresh water in it and soak it for 4 hours. The water level should be above split black gram.
After 4 hours, wash it again with water for 2 to 3 times. Drain all water from the split black gram.
Take a mixer jar and put split black gram in it and grind it into a paste.
Add 1 to 2 tablespoon water as per requirement while grinding.
The consistency of the batter should be thick. Do not add more water.
Now add salt, flattened rice powder, green chili and ginger paste.
Mix it well and stir the batter for 5 to 7 minutes in one direction only so that the batter becomes fluffy and light.
Take a pan a or a kadhai with oil in it and keep on the gas on low flame for heating.
Take a small steel bowl and cover it with clean cotton cloth.
Take the batter by applying water on fingers and keep the batter in round shape on the bowl.
Make a hole in the middle of the round shape batter.
Always use water on the bowl before making round shape batter.
Slowly drop the round shape batter into the pan or kadhai in heated oil.
Drop 3 to 4 round shape batter at a time in a pan or a kadhai.
Drop fry it till it becomes golden brown in color on medium flame gas.
Here your medu vada is ready.
Just like this process make all the vadas.
The second method of doing medu vada is applying water on your palm.
Apply water on your palm and make the batter in round shape.
Make a hole in the middle of the round shape batter and drop it into the pan or kadhai.
In both the methods apply water on hands while making round shape batter. Here your crispy, crunchy spicy medu vada is ready.
You can serve medu vada with sambar, red chutney and green chutney.
SAMBAR RECIPE
RED CHUTNEY RECIPE
INGREDIENTS
- Coconut pieces – 2 cups
- Peanuts or peanuts powder – 1 cup
- Salt – 1/2 teaspoon
- Curry leaves – 8 to 10
- Water – 1 and 1/2 cup
- Cumin seeds – 1 tablespoon
- Mustard seeds – 1/2 tablespoon
- Asafoetida – 1 pinch
- Refined oil – 2 tablespoon
- Red dry chilies – 2
- Kashmiri red chili powder – 1 tablespoon
- Sugar – 1 pinch
PREPARATION TIME: 10 MINUTES
SERVED QUANTITY : 4 TO 5 PERSONS
PROCEDURE
Take a mixer jar and add coconut pieces, peanuts, salt, pinch of sugar, kashmiri red chili powder and grind it into a paste.
Now check the mixture with the help of spoon. Add 1 cup water and again grind it well.
After it comes to a fine paste, pour it into a bowl.
Beautiful red color comes to this chutney.
Now put a small pan or a kadhai on the gas on low flame.
Add oil into the pan or the kadhai. After the oil gets heated, add mustard seeds and cumin seeds into it.
After these seeds pops, add some curry leaves and turn off the gas.
Add pinch of asafoetida and red dry chilies to this heated oil and pour immediately over this chutney.
Mix it lightly so that red chilies and curry leaves are seen on top of the chutney.
Here your red chutney is ready to serve.
You can serve this red chutney with idli, dosa, medu vada, namkeen puri, paratha, bread and with chapati also.
