HOW TO MAKE GULAB JAMUN OF KHOYA
INGREDIENTS
- Mawa/khoya (Thickened milk/Reduced milk) – 500 grams
- All purpose flour (maida) – 1 cup
- Sugar (shakkar) – 4 cups
- Fresh water(pani) – 2 cups
- Baking soda – 1 teaspoon
- Cardamm powder (elaichi powder) – 1/2 teaspoon (optional)
- Refined oil/Ghee (2 to 3 cups for frying – as per requirement)
- Rose essence – 1 to 2 drops (optional)
- SAffron/ kesar – 5 to 7 strands(optional)
COOKING TIME: 1 HOUR 15 MINS
QUANTITY : 45 PIECES (MEDIUM SIZE)
PROCEDURE
Take fresh khoya which is easily available in the market.
First of all mash the khoya for 5 to 10 minutes untill it becomes smooth and light.
Then add all purpose flour and baking soda to this khoya and knead it
If the dove becomes thick then add 1 tablespoon milk and knead it again.
Now again mash it, so that the khoya and maida get mix well.
khoya After the mixture becomes smooth and light, make round shape gulab jamuns one by one using both palms.
It should be plain and perfect in round shape.
After making all gulab jamuns, take a vessel with 2 cups of water and 4 cups of sugar and keep on cooking gas for making sugar syrup on low flame.
Stir it slowly till the sugar syrup becomes 1 string.
Now turn off the gas and add elaichi powder in sugar syrup so that it gets mix well.
In this sugar syrup you can also add saffron strands, rose essence and elaichi powder which is totally optional.
Now keep this syrup aside and let’s take all the gulab jamuns for frying.
Now heat the edible oil in kadhai or pan which is on the gas.
Drop 4 to 5 gulab jamuns at a time in the kadhai/pan and fry in the oil on low flame.
Fry these gulab jamuns till the color of gulab jamun becomes golden brown.
After frying, drop these gulab jamuns one by one in the sugar syrup which is already prepared.
Like this, fry all the gulab jamuns and drop in the sugar syrup.
Keep these gulab jamuns in sugar syrup for 5 to 6 hours.
Here your delicious, juicy, soft sweet gulab jamuns are ready.
Serve these gulab jamuns with sugar syrup.
