HOW TO MAKE EGGLESS DALGONA COFEE CAKE

INGREDIENTS

  • All purpose flour (maida) – 1 & 1/2 cup
  • Powdered sugar – 1 & 1/2 cup
  • Baking powder – 1 teaspoon
  • Baking soda – 1/2 tablespoon
  • Instant coffee powder – 3 tablespoons
  • Refined oil or butter oor ghee – 1 cup
  • Coco powder – 1 & 1//2 tablespoon
  • Vinegar or lemon juice – 2 tablespoon or 1 cup curd
  • Milk – 1 cup
  • Whipped cream – 2 cups
  • Hot water – 6 tablespoon

RECIPE TOTAL TIME : 1 & 1/2 HOUR

PREPARATION TIME : 1/2 HOUR

COOKING TIME: 1 HOUR

QUANTITY : YOU CAN CUT 12 PICES FROM A WHOLE CAKE

PROCEDURE

First of all take refined oil or ghee in a bowl then add milk, sugar powder, vinegar or lemon juice or curd in it. (quantity as per mentioned above in ingredients.

Mix this well with help of whisker.

Then add all purpose flour, coco powder, 1 tablespoon coffee to this mixture.

Again mix it well in one direction only.

(You can also take 1 tablespoon hot water, add 1 tablespoon coffee powder and make just like coffee syrup and pour into the batter, so that coffee gets well mixed.)

 After batter is ready, take a tin or any vessel of round or square shape as per your choice. Grease it with oil and little all-purpose flour(maida).

Now take any aluminium vessel or a pressure cooker. Please remove ring (gasket) and whistle also if you use pressure cooker.

Put inside any stand or any plate and turn on  the gas to preheat the vessel for 10 to 15 minutes.

Till vessel gets preheated.

 Now add baking powder, baking soda quickly to the already prepared cake batter and lightly mix it well in one direction only.

Then immediately pour this batter into greased vessel and put the cake batter vessel  into the preheat aluminium vessel which is on the gas. Keep the gas on low flame.

 Now cover this aluminium vessel by any plate or glass lid. Check this cake after 35 to 40 minutes by inserting a toothpick or a knife in it, so that you get idea whether it is getting baked properly or not.

If the knife or the tooth pick comes out clean then your cake is ready but if some batter leaves on the knife or on the tooth pick then bake it for it for another 10 minutes.

After 10 minutes, if the knife or the toth pck comes out clean then your egg less dalgona coffee cake is ready.

After the cake is ready, switch off the gas and take out the cake vessel from aluminium vessel and keep aside for getting cool.

 Do not demould your cake while it is hot, else it gets stuck to the vessel.

While your cake is getting cool, let’s prepare cream for icing the cake.

 Now take 2 tablespoon coffee powder, 5 to 6 tablespoon sugar and 6 tablespoon hot water.

 Mix all these ingredients and beat well with the help of whisker or electric beater, till coffee leaves foam on it.

This whipping coffee process takes around 15 to 20 minutes for hand whisker and by electric beater it gets whipped in 10 minutes.

After whipped coffee foam is ready. Take another bowl with 2 cups of white whipped cream. Add coffee foam and white cream together and whip it again for 10 minutes, so that fluffy coffee whipped cream is ready.

Now demould the cake into a plate. Keep it into one layer or cut in two layers as per your choice.  

 If you cut into two layers then put sugar syrup and coffee whipped cream on first layer.

Now keep second layer cake on first layer.

Now pour the sugar syrup and coffee whipped cream on top of the cake and spread it evenly. Now decorate the cake by all sides with rest coffee whipped cream. Make all the sides plain with help of any knife or spatula.

You can decorate it by by sprinkling coffee powder or chocolate syrup over the cake as per your choice.

Keep this for 10 to 15 minutes into freeze, so that it gets set.

Take out the cake from refrigerator and cut it into pieces, here your Eggless/Dalgona coffee cake is ready to eat.
